- Dry yeast (7 g)
- Hand hot water (275 ml)
- Strong white flour (500 g)
- Olive oil (lots)
- Salt (1 tsp)
- Sugar (1 tsp)
- Black sea salt
Optional Toppings
- Garlic (Cloves halved)
- Sundried tomatoes
- Black olives
- Rosemary
Method
- Mix the yeast with the water and sugar and wait 15 minutes for it to foam.
- In a mixing bowl mix the flour with the salt. Add the yeast water and 3 tbsp oilve oil. Form into a dough and add more water if needed. The dough should be slightly sticky.
- Knead for 10 minutes.
- Leave the dough in a warm place for an hour to rise with a damp teatowel over it to stop it drying out.
- Knead dough for 1-2 minutes to knock it back.
- Spread the dough out in the baking dish or just on a sheet of baking paper.Leave it to rise for 30 minutes
- Heat the oven to 180C fan.
- Dimple the dough with your fingers and add black sea salt and optional topping with more olive oil.
- Bake for 20-25 minutes until beginnng to brown on top.
